If you give a PW'er a cookie...

Question

In the spirit of the holiday season, I thought it might be fun to list your favorite cookie recipe.

I'll start! Here's one that has been in our family for a few generations.

Pecan Crumbs (aka Pecan Puffs)

1 cup butter, softened (1/2 lb.) two sticks

4 Tbs Sugar

2 cups finley chopped pecans

2 Tsp vanilla (I use pure vanilla)

2 cups cake (or all purpose) flour

2 Tsp milk

Cream butter, add sugar, vanilla, sifted flour, milk and nuts. Form into SMALL balls and place on cookie sheet. Bake in a slow (300 degree) oven for 30 minutes. Mix 1 cup powdered sugar with 2 Tsp cinnamon. Roll baked cookies in this mixture as soon as removed from oven and not too hot to handle.

Excellent with ice cold milk, warm spiced apple cider or egg nog!

I will not bore everyone with the urban legend of this recipe....just try them and enjoy. This recipe may be halved, but I wouldn't advise it, they're just too yummy!

2 cups butter

1 8 oz. Hershey Bar (grated) **Refrigerate chocolate for easier grating*

24 oz chocolate chips

5 cups blended oatmeal

4 cups flour

4 eggs

2 cups brown sugar

2 tsp. baking powder

2 tsp. Bicarb soda

2 tsp. vanilla

1 tsp. salt

3 cups chopped nuts (your choice - I omit!)

2 cups sugar

Measure oatmeal and blend in a blender to a fine powder. Cream the butter and both sugars. Add eggs and vanilla, mix together with flour, oatmeal, salt, baking powder & Bicarb soda. Add chocolate chips, Hershey Bar, and nuts. Roll into balls and place two inches apart on a cookie sheet. Bake for 10 minutes at 375 degrees.

The above quantities makes 112 cookies (maybe).

Sounds like a lot of work but definitely worth it!!!!

MONSTER COOKIES:lgbounces

1/2 CUP BUTTER SOFTENED

1 CUP SUGAR

1 CUP + 2 TLBS. FIRMLY PACKED DARK BROWN SUGAR

3 EGGS

2 CUPS PEANUT BUTTER (CRUNCHY)

3/4 TEASPOON LIGHT CORN SYRUP

1/4 tEASPOON VANILLA

4 1/2 CUPS REG OATS (UNCOOKED)

2 TEASPOONS BAKING SODA

1/4 TEASPOON SALT

1 CUP M&M CANDY(PLAIN)

1 6 OZ PKG. SEMISWEET CHOC. MORSELS.

Cream butter, gradually add sugars. Mix well in electric mixer. Add eggs, peanut butter ,syrup, and vanilla...beat well. Add oats, soda, salt and remaing ingredients...(dough will be stiff)

Pack dough in a 1/4 cup measure cup and drop 4 inches apart onto lightly greased cookie sheet..Lightly press each cookie into a 3 1/2 in circle...Bake at 350 for 12 to 15 minutes. (centers will be slightly soft)....remove and cool...Makes about 2 1/2 Dozen.....

For those of us that dont know how to bake, how about some NO Bake Cookies?

Took this from my wife's recipe book, they are good good good!

2 & 1/3 cup oatmeal

2/3 cup peanut butter

1 tablespoon vanilla

3 tablespoons cocoa

(Meausre all these and set aside)

  • Melt 1/2 stick of butter in saucepan
  • Add 2 cups sugar & 1/2 cup milk
  • boil for 1 minute
  • Add other ingredients (up top) & drop with spoon

Here's one you should enjoy it's fairly easy too.

INGREDIENTS:

1 cup butter

1 1/2 cups white sugar

1 1/2 cups brown sugar

4 eggs

4 teaspoons vanilla extract

4 1/2 cups all-purpose flour

2 teaspoons baking soda

1 teaspoon salt

5 cups semisweet chocolate chips

2 cups flaked coconut

2 cups chopped almonds

DIRECTIONS:

Preheat the oven to 375 degrees F

Grease cookie sheets.

In a large bowl, cream together the butter, white sugar and brown sugar until smooth. Beat in the eggs, one at a time, then stir in the vanilla. Combine the flour, baking soda and salt, stir into the creamed mixture until well blended. Finally, stir in the chocolate chips, coconut and almonds. Drop by rounded spoonfuls onto the prepared cookie sheets.

Bake for 8 to 10 minutes in the preheated oven.

Remove from oven

Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool

Cookie tip!

If you make sugar cookies, make sure you have some fun cookie cutters and sprinkles to top them with. Make a family afternoon of it if you have children (or even if you don't) and help them decorate. Makes for great memories.

Go to cold section of supermarket. Feel around for something that looks like an overstuffed sausage. It's yellow and has pictures of cookies on it if that helps.

Do not sample the dough or you will eat half the log and your spouse will make you run to the store for more. PLus you'll get worms.

I've always been a fan of the peanut butter cookie with a kiss in the middle, and it has absolutely nothing to do with living so close to Hershey.

Just remember too many cookies and not enough work will make you a Santa doppleganger next christmas season. Keep festive but don't loose your focus.

Mmmm...Tequila Christmas Cookies:

1 cup of water

1 tsp. baking soda

1 cup of sugar

1 tsp. salt

1 cup of brown sugar

1 tbsp. lemon juice

4 large eggs

1 cup nuts

2 cups of dried fruit

1 bottle tequila

Sample the tequila to check quality.

Take a large bowl, and check the tequila again, to be sure it is of the

highest quality. Pour one level cup and drink.

Turn on the electric mixer.

Beat one cup of butter in a large fluffy bowl.

Add one teaspoon of sugar. Beat again.

At this point, it's best to make sure the tequila is still OK, so, try

another cup ... just in case.

Turn off the mixerer thingy.

Break 2 leggs and add to the bowl and chuck in the cup of dried fruit.

Pick the frigging fruit off the floor.

Mix on the turner. If the fried druit gets stuck in the beaterers, just

pry it loose with a drewscriver.

Sample the tequila to check for tonsisticity.

Next, sift two cups of salt, or something. Check the tequila.

Now shift the lemon juice and strain your nuts.

Add one table.

Add a spoon of sugar, or somefink. Whatever you can find.

Greash the oven.

Turn the cake tin 360 degrees and try not to fall over.

Don't forget to beat off the turner.

Finally, throw the bowl through the window, finish off the booze and

make sure to put the stove in the dishwasher.

Washaway why not just get that darn bottle opened and and ice to it and finish it off, no wait make me a Tequila Sunrise first:)

Pressure Pro your lazy side is showing lately, besides the wife might not let you back in once you're sent back to the market so keep that blanket in the truck!

Beth any cookies you make I must have samples sent, I shall Email you our home address.

Guys n gals I used to love baking from scratch and had lots of recpts, all packed away in one of the many unpacked boxes, most are from my late Grandfather who owned a bakery back in the days all things were made from scratch.

For most of you that is long before you were born!

Beth if you think it is weird how do you think it feels to me.

I mean I gave up SUNNY WARM DAYS so I could freeze my butt off daily now.

And I enjoy it some, less people, less traffic, no wall to wall cities etc.

Sure it is not to be compared to a big city but that is ok as I don't need the stress anymore.

Hmm I think Ken of Pressure Pro is going to say I am showing my age again!

Those young ones are sure JEALOUS.
